LMS Marketplace uses AI models in a single feature:

Where the model is chosen
The review's model is fixed by the platform and isn't configurable: a published plugin belongs to the person who publishes it, not to an organisation, so there is no organisation that could decide for it.
Even so, the review is listed with the other AI features under Organisation → AI models in your account, so that the answer to "which models are being used?" is complete. How the model is decided in the other applications is covered in AI models.
